Dahi Baingan Recipe ⤵️

30 Minute Meals Episode 5 - Dahi Baingan 🍆

Recipe
1 large eggplant cut in thick slices
1 tsp salt
1 tsp turmeric
1 tsp red chilli powder
2 tbsp oil

Mix all the ingredients and marinade the egg plant
Fry on a hot tawa with some oil till fully cooked on both sides
Remove in a bowl and set aside

Yogurt
1.5 cups yogurt/greek yogurt
1 tsp salt
3 cloves garlic crushed
Water as required to thin

Mix all the ingredients well
Pour over the fried egg plant & top with the baghar
Mix well and garnish with chopped coriander
Serve warm with rice or roti

Tarka
1 tbsp ghee
1 tbsp oil
1 pinch heeng
1/4 cup chopped onion
5 to 6 curry leaves
1 large dried chilli
3/4 tsp Kashmiri red chilli pwd
1/2 tsp turmeric
3/4 tsp cumin seeds
1/4 tsp mustard seeds

Fry the onion in the ghee, oil & hing
Add the curry leaves and cook till aromatic and the onion softens
Add the chilli & spices. Cook till fragrant (do not burn)
Pour over the yogurt
