Blueberry Lemon Coffee Cake Recipe
Ingredients

For the streusel
6 Tablespoons light brown sugar
½ cup all-purpose flour
4 Tablespoons cold, unsalted butter, cubed
1 teaspoon cinnamon
¼ teaspoon salt

For the blueberry lemon coffee cake
2 cups all-purpose flour
1 cup granulated sugar
1 Tablespoon baking powder
¾ teaspoon salt
5 Tablespoons unsalted butter, room temperature
¾ cup Carnation Evaporated Milk
¼ cup water
1 egg, slightly beaten
1 ½ teaspoons vanilla extract
1 teaspoon lemon zest (zest from one lemon)
2 cups fresh blueberries

How to make blueberry lemon coffee cake:
1. Preheat the oven to 375 degrees. Grease an 8x8 baking pan with nonstick spray, and set aside.
2. Prepare the streusel topping. In a small bowl, add brown sugar, flour, cinnamon, and salt. Whisk until combined. Add cold cubed butter and rub into the dry ingredients with your fingers until a crumbly mixture is formed. Place the streusel topping in the fridge until ready to use.
3. In a large bowl, add flour, sugar, baking powder, and salt. Whisk to combine. Cut in the room temperature butter using a pastry cutter or fork until a crumbly mixture is formed.
4. Make a well in the center. Pour in Carnation Evaporated Milk, water, egg, vanilla extract, and lemon zest. Mix the batter using a rubber spatula until just combined and no dry pockets remain. The batter will be lumpy and thick.
5. Spoon the batter into a prepared pan and spread it out into an even layer.
6. Remove the streusel topping from the fridge, and sprinkle the streusel all over the top.
7. Bake on the middle rack for 45-50 minutes until the edges are golden brown and set, or until a toothpick inserted in the center comes out clean. If the streusel topping starts to brown too quickly, tent with a piece of aluminum foil.
8. Remove from the oven and cool in the pan on a cooling rack for 20 minutes before slicing.
This blueberry lemon cake is best served the day of. Leftovers will keep well for a few days wrapped in foil and stored at room temperature.
