Portobello Mushroom Sandwich Recipe is presented in this video. This delicious sandwich is made on toasted ciabatta bread with very specific in taste ingredients like arugula, goat cheese, truffle mayo and roasted (grilled) mushroom cap. To make this portobello sandwich recipe even creamier I added avocado. There is always good time and good reason to serve sandwich like this one! This is vegetarian recipe and I use grilled portabella mushroom as a substitute to make it meatless. Ingredients (SERVING FOR ONE SANDWICH):
1 CIABATTA ROLL
1 PORTOBELLO ( PORTABELLA ) MUSHROOM CUP
1/4 cup GOAT CHEESE
HANDFUL OF ARUGULA
1 TOMATO SLICE
1 SLICE OF RED ONION
1/2 SMALL AVOCADO
OIL
PINCH OF SALT
PINCH OF BLACK PEPPER
1 tbsp TRUFFLE MAYO

Cooking Instructions:
1) Wash and dry portabella mushroom. Remove the stem. Brush portobello mushroom cap with oil. Add salt and black pepper. Roast in the oven for 20-25 min at 400 F / 205 C. You can grill it on the grill or use toaster oven as well.
2) Cut ciabatta roll in half and toast it until the edges get golden-brown.
3) Spread truffle mayo on each half of roll.
4) Add roasted portabello mushroom cap. Spread creamy goat cheese on the mushroom.
4) Add as follow: handful of arugula, tomato, sliced avocado and red onion. Cover with the roll on the top. It is ready to be served!

Hope you will love this sandwich recipe as I do! For sure this is one of my favorite portabella sandwiches. It is so easy to prepare and soooo delicious! I like that this recipe contains so many ingredients that I like to incorporate in my cooking. Portobello mushroom gives a nice texture. Thanks to the goat cheese and avocado we can experience creaminess. Toasted bread gives its crispiness and crunchiness. And arugula adds nutty flavor. And also do I really have to mention how greatly nutritious this green stuff is? :) So let's make the sandwich now!
