Low Carb Coffee Cake Muffins:

Makes 12 muffins
Preheat oven to 350F.

Cinnamon Sugar:
2T Allulose
1 tsp ground cinnamon
----Shake to mix and set aside.

Cinnamon Streusel:
½ cup blanched almond flour
1/3 cup allulose
1 1/2 tsp ground cinnamon
1/8 tsp sea salt
¼ cup coconut oil, melted
½ chopped pecans (optional)
----Mix thoroughly and place in fridge while preparing cake batter.

Coffee Cake Batter:
3 large eggs, beaten
¼ cup canned full fat coconut milk
1T fresh lemon juice
¼ cup coconut oil, melted
1 tsp liquid maple stevia
¼ cup allulose
1 tsp vanilla
----Mix all ingredients above in medium bowl until smooth.
2 cups blanched almond flour
¼ cup keto baking mix or arrowroot flour
½ tsp baking soda
¼ tsp sea salt
2 tsp ground cinnamon
----Mix dry ingredients until thoroughly combined and lump-free.
Add dry ingredients to wet ingredients and stir to combine well.
Add half the batter in small dollops into lined cupcake pan. Sprinkle Cinnamon Sugar onto each. Divide remainder of batter among the cupcakes. Retrieve streusel topping from fridge and break up with fork. Spoon onto each cupcake. Bake 23-25 minutes. Let cool in pan 20 minutes. Remove from pan to wire rack to finish cooling. Store in fridge 3-4 days or in freezer up to a month.
