There are two main ways to shade Japanese green tea. There is the old-fashioned method, which uses straw mats to cover the tea. There is also the new method that uses black nylon mats to shade the tea. The new method is far more common in Japan but certain tea farms still do it the old-fashioned way.

The reason the tea plants are shaded prior to harvesting is to boost the levels of chlorophyll and theanine in the tea. This gives the tea the subtle sweetness and great natural umami flavors that have made Japanese tea so popular.
