This is the 3 of my series in making the "Christmas Pickles". Red Cinnamon & Green lime. They're delicious anytime, but make very pretty relish trays during the holidays.

Prepare the cucumbers, as in Part 1 with the lime water & soaking in cold water.

I large pot, add 1 cup vinegar, 1 Tablespoon Alum, 1 small bottle red food coloring (add food coloring to desired color). Drain cold water from cucumbers and add to pot with vinegar mixture & add water, to cover. Heat & simmer for 2 hours. Drain well & discard liquid.

Prepare syrup, bring to boil and pour over the drained cucumbers.
6 cups vinegar
14 cups sugar
8 cinnamon sticks
1 large package red hots

cover & let stand overnight. In the morning, drain liquid, reheat & pour over cucumbers. Repeat this process for 3 mornings. On the 4th day, heat the cucumbers in the syrup, to boiling. Pack into jars, cover with hot liquid. Process in water bath or steam canner for 15 minutes.
Allow to set on counter overnight. The next day, wash the jars, remove lids & store in pantry
