Ingredients:

Active Yeast:
¼ cup milk (1%), warm (60 mL) (30 seconds microwave)
½ tsp white granulated sugar
2 ¼ tsp active dry yeast

Dry:
443 g Bread flour or all purose flour
29 g milk powder or coffee creamer powder

Liquid:
½ cup milk or water, warm (120 mL) (45 seconds microwave)
41 g oil (3 tbsp)
1 large egg (56 g)
½ cup smashed boiled yam or sweet potato (105 g)
½ tsp vanilla extract
½ tsp salt (4 g)
114 g granulated sugar

Toppings:
Unsalted butter
white granulated sugar
shredded cheese


**Bake at 350 F for 23 to 26 minutes (using 2 round 9 inch pyrex glasses)**


1. Activate yeast and proof it for 10 minutes.
2. Then combine activated yeast, dry and liquid ingredients all together.
3. Slightly knead it just to combine.
4. Cover with plastic wrap and let it rest for 15 minutes to let the gluten develop.
5. Then knead for 10-15 minutes using medium high speed.
6A. The dough is done once it passes the window test.

6B. The dough is sticky but avoid adding flour as this will affect the fluffiness of the bread. Instead, grease your hands with oil when handling the dough.

6C. Then take out the dough from the bowl and grease the bowl with oil. Then place the dough back into the bowl.
7. Cover and let it rise for 1 hr and 15 minutes (place in a warm spot - not hot but warm).
8. Divide the dough into half.
9. Each dough, divide into 6 small pieces (total = 12 pieces).
10. Flatten the small dough to remove any gas and round them into a small ball.
11. Place them in a greased, floured round pyrex glasses.
12. Each pyrex should contain 6 small balls arranged into a flower.
13. Cover and let it rise for about 1 hr and 15 minutes (place in a warm spot - not hot but warm).
14. Bake at a preheated oven at 350 F for 23-26 min (rotate halfway).
15. Let it cool and top with unsalted butter, sugar and shredded cheese.
16. Enjoy.
17. Any leftover or untouched buns, cover the pyrex with plastic wrap to prevent the bread from drying out.


Note:
-The yam/sweet potato is my secret ingredient. It adds a flavourful taste to the bread. Without it, the flavour is lacking. You can also use boiled ube or purple yam (but no to plain potato though).
