Healthy Egg and Cheese Bites
Ingredients
• Instant oats 1 cup
• Salt to taste
• Black pepper powder to taste
• Oregano 1/2 tsp
• Basil 1/2 tsp (optional)
• Garlic powder 1 tsp
• Eggs 3 large, at room temperature
• Cottage cheese 1 cup
• Green bell pepper 1/2, chopped
• Red bell pepper 1/2, chopped
• Spring onion 2 tbsp (only green part)
• Corn 1/2 cup
• Mozzarella cheese 1/2 cup (optional)
• Cheddar cheese 1/ 2 cup (optional)
Preparation
1. Grind the oats into powder. Transfer to a bowl.
2. Add salt, pepper, oregano, basil and garlic powder. Mix
3. Add eggs, cottage cheese, red and green bell peppers, spring onions, corn, and mozzarella cheese and cheddar cheese. Mix until combined.
4. Oil a muffin liner or any mould of your choice and place the mixture in it.
5. Bake at 160˚C for 20-25 minutes or until the eggs inside are cooked and no moisture is felt when you cut it.
6. Enjoy!
7. NOTE: You can also make pancakes from this batter on stovetop.
