Kenwa Mabuni, the founder of Shito-ryu Karate, developed and codified "Five Principles of Defense" known as "Uke no Go Gensoku" in Japanese:

"Rakka" (落花) - the characters mean "Falling Flowers"
"Ryusui" (流水) - the characters mean "Flowing Water"
"Kusshin" (屈伸) - the characters mean "Bend, Extend"
"Teni" (転位) - the characters mean "Change Place"
"Hangeki" (反撃) - the Japanese word for "Counterattack"

This video also includes many examples of classical blocking techniques in Shito-ryu Karate. Some individual blocks or techniques may exemplify a specific principle (such as "Nagashi Uke" being an apt example of "Ryusui"), but any single movement in Shito-ryu kata will feature multiple principles of defense by design.

It is important to note that the word "Uke," in the context of "Uke no Go Gensoku," is being used as a stand-in word for "defense," but it does not mean "blocking." The word "Uke" actually translates literally as "receive" which is a more inclusive word for all means of addressing attack, while "blocking" only refers to one category of defense. Movement such as body shifting ("Taisabaki") and evasion, or throwing, or counterattacking, are just some of the other categories of Karate defense in addition to blocking.
