Once again here I am in the kitchen preparing a delicious and nutritious meal. Being a vegan / vegetarian involves being creative with your meals.

Thank God we live in an era that we can ask google anything, at the beginning of my journey I had no idea what to prepare because I used to have my staple recipes. I have discovered so much within these last 4 years and what's so much fun is that there are so many vegetables and combinations that will blow your mind away.

Vegetarian food is not supposed to be bland or gross, it's actually exploding with flavor and texture, you just have to find your favorite combinations. I love this recipe, it is filling and loaded with a whole bunch of goodness, you can also try to make burgers with it instead of doing the whole meatloaf.

It conserves very well once it's cooked, all you have to do is heat it up and serve it with your favorite veggies and salad. Even if you're not vegetarian it's still worth giving it a shot, hope you and your family enjoy this recipe.

This is how its done

Ingredients

• 2-14 oz cans or 3 1/3 cups cooked chickpeas, drained and rinsed
• 1 onion, chopped
• 3 celery stalks, chopped
• 3 carrots, diced
• 4 garlic cloves, minced
• 1 cup panko breadcrumbs
• 1 cup quinoa batter
• 1/2 cup unflavored soy or almond milk
• 2 tbsp soy sauce
• 2 tbsp olive oil
• 2 tbsp ground flax seeds
• 2 tbsp tomato paste
• 1 tsp liquid smoke
• 1/4 tsp black pepper

For the Maple Glaze

• 1/4 cup tomato paste
• 2 tbsp maple syrup
• 2 tbsp apple cider vinegar
• 1 tbsp tamari


Preparation:
1. Preheat oven to 380°.Arrange a strip of parchment paper width-wise along the center, with just a bit hanging over the sides.
2. Working in batches if needed, place all meatloaf ingredients into food processor bowl and pulse until chickpeas are broken up and ingredients are well mixed, stopping to scrape downsides of the bowl as needed. Do not over blend. If working in batches, transfer each batch to a large mixing bowl when complete and then mix by hand.
3. Press mixture into prepared loaf pan and bake 30 minutes.
4. While meatloaf bakes, stir glaze ingredients together in a small bowl.
5. Remove loaf from oven after 30 minutes and spoon glaze over top of the loaf. Bake another 20-25 minutes. Remove from oven and allow to cool at least 10 minutes before cutting.
