Seasonal = anything that’s in-demand seasonally, as opposed to all year round (evergreen), e.g. Christmas, Easter, Valentine’s, Holidays, 4th of July, Father's day, Mother's day, Summer/Winter and similar.

The “downside" for a seasonal book of course is that you get a pretty short period of demand and there for sales. A few months, at best. Sometimes just 2-3 weeks. And that’s why many stay away.
But… the upside is that there is a sudden surge of huge demand, out of the blue, a huge wave comes along with 1000s of people wanting books around certain seasonal topics, and if you’re strategic and have planned things well, you can really ride that wave for all it's worth.
