INGREDIENTS
3 Mangoes (1 Cups Pulp)
1 cup Sugar
1/4 tsp Cardamom powder (Optional)
Ghee

INSTRUCTIONS
Wash the mangoes, peel them and remove all the pulp.
Add the pulp in the blender and blend it to a fine puree.
Do not use water for blending.
Heat a sauce pan on medium heat.
Pour the mango puree into the pan.
Add sugar and mix well.
Keep stiring it so that it cooks evenly.
Cook the mixture on medium heat.
Add cardomom powder and lime juice.
Mix well and turn off the gas after 20mins.
Grease a steel dish with ghee.
Transfer the mixture on the steel dish and tap it well so that it spreads evenly.
Dry the amba poli in the hot sun for about 4 days and in evenings under the fan.
When Amba poli dries loosen all the corners and roll it on the dish.
Cut it into pieces with the help of a knife, you can choose the shapes of cutting as per your choice.
Amba Poli is ready!
