We made a recipe video on sweet and sour chicken Hong Kong style and asked if you'd like to see how sweet and sour sauce would traditionally look, loads of you answered yes, so here it is! You can see from the phone that the Sweet and Sour already looks totally different, and although does taste sweet and sour, it doesn't have the same flavour profile of the modern, westernised version that is ow found everywhere, even in China. Most chefs have no idea this is what sweet and sour looked like 200 years ago, but now you guys know! Also we did a battered fried chicken recipe that works really well with the dip, it's mums own and she's very proud of it.

The sauce
4 tbsp honey
15g finely sliced fresh ginger
1 finely chopped large clove garlic
40ml rice wine vinegar
2 tsp light soy
Pinch salt

10 chicken fillet slices
Inner flour mix

Batter

4 large fresh limes leaves, dried won't work
500ml warm water
1/4 tsp salt
