Resep Pecel Lele Lamongan (untuk 5 porsi)
Bahan marinasi:
1 kg ikan lele
5 siung bawang putih
4 cm kunyit
4 cm jahe
½ sdm lada putih butir
1 sdm ketumbar
150 ml air
1 sdm garam
½ sdm penyedap
Bahan sambal lamongan:
2 siung bawang putih
12 siung bawang merah
2 butir kemiri
13 buah cabai rawit merah
12 gr terasi, bakar
2 ½ buah tomat merah
2-3 sdm minyak
1 sdt garam
¾ sdt penyedap
1 sdm gula pasir
Pelengkap:
tempe
tahu
nasi putih
timun
kemangi
jeruk limau
Cara membuat:
1. Iris jahe dan bawang putih. Di dalam blender masukkan jahe, bawang putih, kunyit, lada putih butir, ketumbar, penyedap, garam dan air, haluskan
2. Potong tempe dan sayat-sayat lele kemudian marinasi dengan bumbu halus, aduk rata. Diamkan 10 menit
3. Panaskan minyak, goreng lele hingga matang, tiriskan kemudian goreng tempe dan tahu hingga matang, tiriskan
4. Panaskan sedikit minyak, goreng bawang merah sesaat kemudian masukkan kemiri, bawang putih dan cabai rawit, goreng hingga kecokelatan, sisihkan ke dalam ulekan
5. Potong tomat dan goreng hingga kecokelatan
6. Di dalam ulekan masukkan garam, penyedap, gula pasir dan terasi, ulek hingga halus kemudian masukkan tomat dan sedikit minyak panas, ulek hingga halus
7. Pecel lele lamongan siap disajikan

Lamongan Pecel Lele Recipe (yield 5 servings)
Marinade ingredients:
1 kg catfish
5 clove garlic
4 cm turmeric
4 cm ginger
½ tbsp white peppercorn
1 tbsp coriander
150 ml water
1 tbsp salt
½ tbsp MSG
Lamongan Sambal ingredients:
2 clove garlic
12 pc shallot
2 pc candlenut
13 pc red Thai chili
12 g shrimp paste, roasted
2½ pc red tomato
2-3 tbsp oil
1 tsp salt
¾ tsp MSG
1 tbsp sugar
To serve:
Tempeh
Tofu
White rice
Cucumber
Lemon basil
Kaffir lime
Steps:
1. Slice the ginger and garlic. In a blender, add ginger, garlic, turmeric, white peppercorn, coriander, MSG, salt, and water. Blend until smooth.
2. Slice the tempeh and score the catfish, then marinate them with the blended spice. Mix well and marinate for 10 minutes.
3. Heat oil. Fry the catfish until crispy. Set aside, then fry the tempeh and tofu until cooked. Set aside.
4. Heat a little oil. Fry the shallots briefly, then add candlenuts, garlic, and Thai chili. Fry until browned, then transfer to mortar.
5. Cut the tomatoes and fry until browned.
6. In the mortar, add salt, MSG, sugar, and shrimp paste. Grind until smooth, then add the tomatoes and a little hot oil. Grind until smooth.
7. Lamongan Pecel Lele is ready to serve.
