I let the carrots soak in water with about 1/4 cup of white vinegar. Anywhere from 10 to 15 min.
Ingredients: 2 Apples, 1 lemon, fresh root of ginger the size of a lime, and 5 pounds of carrots.
I make 10 pounds at once. They stay fresh in the fridge, and gone in 2 days.
