Ambula is one of the way to preserve raw mango in Odisha. When added to dishes it gives a tangy and fresh flavor. Try this recipe once and I am sure you are gonna love it. Here I have cooked it besara (a paste made out of mustard seeds). Just make sure that don't over cook the paste and use fresh curd or if the curd is a bit more sour add a teaspoon of sugar or jaggery to balance the flavor. You can make your besara paste in grinder as well but make sure to make a smooth paste or else it might taste bitter.
