Looking for a quick and flavorful meal? Try these amazing Shrimp Fajitas! They’re packed with juicy shrimp, vibrant veggies, tangy guacamole, and topped with a creamy cilantro lime salsa. Perfect for a weeknight dinner or a weekend treat!

Ingredients (4 servings):

Shrimp Fajitas:
▪️1 pound raw shrimp (thawed, deveined, and tails removed)
▪️12 carb balance flour tortillas (fajita size)
▪️1 small red bell pepper
▪️1 small yellow/orange bell pepper
▪️1 small white (or yellow) onion
▪️1 packet fajita seasoning
▪️2 tablespoons avocado oil

Guacamole:
▪️4 avocados
▪️1-2 Roma tomatoes, diced
▪️1/2 cup red onion, diced
▪️1/2 cup cilantro, chopped
▪️Juice of one lemon
▪️Juice of one lime
▪️Salt, to taste
▪️Garlic powder, to taste

Cilantro Lime Salsa:
▪️1 small jalapeño (or serrano)
▪️1 clove garlic
▪️Juice of 1 lime
▪️1 cup cilantro
▪️1 cup plain Greek yogurt
▪️1-2 tablespoons olive oil (add more if needed/desired)
▪️1 teaspoon pink salt

Instructions:
1. Thinly slice bell peppers and onion.
2. Heat avocado oil in a large pan. Add sliced veggies and cook until soft (about 10-12 minutes), then season with HALF a packet of fajita seasoning and mix well.
3. Remove veggies and set aside in a large bowl. Then add raw shrimp into the pan and cook until shrimp is pink (2-3 minutes per side). Add the rest of the fajita seasoning packet, mix well, and the add the shrimp to the bowl with onion and bell peppers.
4. Combine all guacamole ingredients in a bowl, mash and mix well then set aside.
5. Combine all cilantro lime salsa ingredients in a blender and blend until smooth.
6. Warm tortillas in a pan or on a griddle.
7. To assemble the fajitas, place cooked veggies and shrimp inside a warm tortilla. Top with guacamole, and cilantro lime salsa.
