In this video, I will show you how to make a traditional South East Asian dessert / snack known as Tapai Pulut in Malaysia & Brunei, and Tape Ketan in Indonesia.

It’s really quite simple, and only uses 2 ingredients, however to achieve a great Tapai, you must pay attention to temperatures & hygiene (so as not to introduce any bad bacteria or unwanted mould, and so that the good yeast doesn’t get killed off).

All you need is:
•2 cups of glutinous (sweet) rice
•1 ball of Chinese yeast. Please don’t use any other type of yeast as it won’t work nearly as well. You could use any type of rice, as all carbs will ferment to a certain degree, however glutinous rice is preferred for its high sugar content.

When done, the Tapai will have a spongy texture with sweet liquid and a heady, sweet alcoholic aroma just like rice wine.
