🌿 Dhaba Style Palak Paneer
Preparation Time: 30 minutes
Cooking Time: 20–30 minutes
Serves: 4

🧾 Ingredients
Palak (Spinach) – 2 bunches
Paneer (Cottage Cheese) – 250 g (cut into cubes)
Tomatoes (chopped) – 2 medium
Onions (chopped) – 2 medium
Ginger-Garlic paste – 1 tbsp
Green Chillies (chopped) – 2
Red Chilli Powder – 1 tsp
Coriander Powder – 1 tsp
Turmeric Powder – ¼ tsp
Salt – to taste
Whole Spices – bay leaf, cardamom, clove (optional)
Cumin Seeds – 1 tsp
Hing (Asafoetida) – a pinch
Curd (Yogurt) – 2 tbsp
Fresh Cream – 2 tbsp
Kasuri Methi (dried fenugreek leaves) – 1 tsp
Black Pepper Powder – ¼ tsp
Garam Masala – ½ tsp
Chopped Coriander Leaves – a handful
Oil & Ghee – 2 tbsp each

👩‍🍳 Method
Blanch the Spinach (Palak):
In a kadhai, boil water with a pinch of salt.
Add the palak and boil for 2 minutes.
Transfer immediately to a bowl of ice water to retain the green color (blanching technique).

Make the Palak Puree:
In a grinder jar, add the blanched palak, chopped coriander leaves, and green chillies.
Grind into a smooth paste and keep aside.

Fry the Paneer:
Heat some ghee and oil in a pan.
Lightly fry the paneer cubes until golden and set aside.

Prepare the Masala Base:
In a kadhai, heat ghee and oil.
Add hing, cumin seeds, and whole spices.
Add chopped onions and sauté until golden.
Add ginger-garlic paste and sauté till aromatic.
Add chopped tomatoes and cook until soft.

Add Spices:
Mix in red chilli powder, turmeric, coriander powder, salt, black pepper powder, and garam masala.
Add curd and cook until the masala releases oil.
Add kasuri methi and cook for 5 minutes.

Combine Palak & Paneer:
Add the palak puree to the masala and mix well.
Add fried paneer cubes and simmer for 5–7 minutes.
Add fresh cream and stir gently.

Prepare the Tadka (Tempering):
In a small pan, heat ghee.
Add chopped garlic and dry red chillies; sauté until golden.
Add a pinch of Kashmiri red chilli powder and pour this tadka over the palak paneer.

🍽️ Serving Suggestion
Serve hot with chapati, paratha, or jeera rice for a complete dhaba-style meal.
