Egg Tarka and Roti is such a go to dinner option in Kolkata and it’s surrounding cities. Local Dhabas sell this tarka made with whole moong dal at an pretty affordable rate Rs.50-70 and paired with roti this is perfect for Dinner ✨

Note: My favourite local dhaba uses “Tarka” instead of “Tadka”. So the spelling :)

Ingredients:
Whole Moong Dal - 1 cup
Chola r Daal / Split yellow daal - 3 tbsp
3 tbsp mustard oil , 3 tbsp ghee and 30 gms butter
1/2 cup chopped onions
1/3rd cup tomatoes
1 tbsp ginger garlic paste
1.5 inch ginger - Chopped
9-10 garlic cloves - chopped
1 green chilli - chopped
Powdered Spices: 1/2 tsp turmeric , 1 tsp red chilli, 1.5 tsp coriander and 1 tsp cumin
2 tbsp kasuri methi - dry roast and crush
1/2 tsp garam masala
Chopped coriander leaves
3 eggs - Whisked with salt
Salt
Hot water
1 dry red chilli and 1/2 tsp cumin seeds for tempering

Preparation:
Rinse and soak the dal overnight. Change the water 2 hrs before cooking

Cooking:
Heat mustard oil till smoking hot
Fry onions till golden
Add ginger garlic paste. Saute and add tomatoes
Add spices and salt with 1/4 th cup water
Once oil separates, add the dal. Saute for 2 min then add 2 cups water
Bring to a simmer and remove the scum on top. Add ghee
Pressure cook for 3 whistles. and let it naturally depressurise

Heat vegetables oil and scramble 2 eggs

Heat ghee and temper with whole spices
Add Onions and chopped ginger garlic and green chillis. Saute over a high flame till raw smell is gone
Add tomatoes and saute for 2 minutes
Add boiled dal. Saute and add 1 cup water
Bring to a boil and add 1 more egg. Let it set slightly then mix throughout the tarka for a creamy texture
Simmer for 10 minutes
Mix kasuri methi and garam masala. Adjust salt if required
Add fried eggs , chopped coriander and butter. Turn off the gas and give one final mix
