Ingredients:

Wet
2 TBSP Kerrygold Butter
1 tsp Extract of choice
2 Egg Whites

Microwave Ingredients
8 ounce Mozzarella Cheese
3 ounce Cream Cheese

Dry Igredients
8 ounces Almond Flour
1 tsp Baking Powder
1/2 cup Xyla or Swerve (Zyla is sweeter, Swerve blends easier)
Optional : 1 - 3 TBSP of Ghirardelli unsweetened cocoa

Combine Wet ingredients and set aside. Combine Dry ingredients and set aside. Mix Wet ingredients into dry ingredients and set aside.

Combine Microwave ingredients into a microwave safe bowl. Mix and put into microwave for 1.22 minutes. Mix until doughy but not stringy.

Combine all ingredients and stir until evenly mixed. Roll out dough onto parchment paper and roll into a tube and place in freezer for 30 minutes . Remove from freezer after 30 minutes and remove from parchment paper. Cut into even slices and place on cookie sheet and cook for 30 minutes at 350. Makes 18 Cookies,
