Recipe for 8 raisin buns!

175g Raisins
250g Bread flour
5g Salt
6g Yeast
20g Caster sugar
25g Butter (Room temperature)
1 Egg
110ml Milk (Warm)

Egg wash:
1 Egg
30ml Milk

Extra:
25g Butter to melt and brush the buns..

8 Buns +- 80g each...

Process:

-One day before, soak raisins in water for 15 minutes, let them dry before using.
-Add egg, milk (warm) and yeast into a bowl and mix.
-Add flour, salt, sugar and butter.
-Mix slowly until all ingredients are will mixed, around 3 minutes.
-Mix fast for around 7 minutes until your dough is smooth and extensible.
-Add raisins and mix slowly until they are properly mixed into the dough.
-Put dough into greased bowl, cover and rest for 1 hour.
Divide into 8 buns + 80g each.
-Shape them into balls.
-Place onto baking tray.
-Glaze with egg wash.
-Let them rest, covered for 1 hour.
Bake 220C / 428F for + 12 minutes.
-After baking brush with melted butter.
