Ingredients:
1 kg chicken (cut into pieces)
1 cup plain yogurt
2 tablespoons lemon juice
2 tablespoons vegetable oil
1 tablespoon ginger-garlic paste
1 tablespoon tandoori masala (you can buy this or make your own)
1 teaspoon red chili powder (adjust to taste)
1 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
Fresh coriander and lemon wedges for garnish
Instructions:
1. Marinate the Chicken: In a large bowl, combine the yogurt, lemon juice, vegetable oil, ginger-garlic paste, tandoori masala, red chili powder, turmeric powder, garam masala, and salt. Mix well to form a marinade. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl and let it marinate for at least 1 hour (preferably overnight in the refrigerator for better flavor).
2. Prepare the Pan: Heat a heavy-bottomed pan or skillet over medium heat. You can also use a grill pan if you have one.
3. Cook the Chicken: Once the pan is hot, add a little oil to prevent sticking. Place the marinated chicken pieces in the pan without overcrowding. Cook for about 5-7 minutes on each side until the chicken is cooked through and has a nice char. You may need to adjust the heat to avoid burning.
4. Check for Doneness: Make sure the chicken is fully cooked by checking that the juices run clear when pierced with a fork. The internal temperature should reach 75°C (165°F).
5. Serve: Once cooked, remove the chicken from the pan. Garnish with fresh coriander and serve with lemon wedges on the side. You can enjoy it with naan, rice, or salad.
