Seasoning is the process of applying a layer of animal fat or cooking oil to cast-iron cookware and frying it.

Polymerize means to combine or cause to combine in order to form a polymer. When cooking oil or fat is heated past its smoke point, it undergoes chemical transformation to form a polymer. Seasoning is the polymer on your cast iron pan.

If you notice rust on your cast iron cookware, scrape it with coarse salt and water to remove the old seasoning before putting a new layer of seasoning. It really is that easy.

Cleaning - Because scrubbing or washing in a dishwasher can remove or harm the seasoning on a bare cast-iron pan, these pans should not be cleaned in the same way as most other cookware.

Some chefs recommend just wiping them clean after usage, while others recommend washing them with hot water and a strong brush.
