Ingredients:

1lb dried beans or 3-4 15oz cans (Great Northern/Cannellini beans)
2 carrots
5 garlic cloves
1 large or 2 small onions
15 oz can crushed tomatoes
6 cups of water
2 tbsp. Tomato paste
1 tsp cumin
3tbsp. Olive oil
Salt & pepper to taste
Chopped parsley and green onion for garnish
