蟲草花鮮百合雪耳湯

材料：
蟲草花40克
瑤柱6粒
鮮百合一個
蓮子一兩
雪耳一個
蜜棗4粒
急凍排骨2磅

處理：
1. 急凍排骨，清水解凍後，大火煲滾一鑊水，加入米酒一湯匙及粗鹽一湯匙，出水至起泡，清水沖洗乾淨，擎乾水。
2. 瑤柱，清水洗乾淨，清水浸，保留碗中水分。
3. 蓮子，清水浸。
4. 雪耳，清水浸軟。
5. 蜜棗，清水浸。
6. 鮮百合，搣開一塊塊，清水逐一洗乾淨，擎乾水。
7. 蜜棗，清水沖洗乾淨，放鮮百合內，擎乾水。
8. 蓮子，去芯，清水沖洗乾淨，放鮮百合內，擎乾水。
9. 雪耳，清水洗乾淨，搣開細舊，放鮮百合內，擎乾水。
10. 洗乾淨煲。
11. 所有材料，放煲內，加入瑤柱及水分和排骨，清水至6升的容量。

烹調：
1. 大火煲滾湯。
2. 湯滾起時，轉中慢火煲一小時。
3. 湯已煲了一小時，蟲草花，清水浸5分鐘。
4. 蟲草花已浸了5分鐘，清水沖洗乾淨，擎乾水。
5. 湯，加入蟲草花，繼續煲30分鐘。
6. 完成，可享用。

Fresh lilly and snow fungus soup with cordyceps flowers

Ingredients:
Cordyceps flowers 40g
Dried scallops 6 Nos.
Fresh lilly 1 No.
Lotus seeds 1 tael
Snow fungus 1 No.
Candied dates 4 Nos.
Frozen pork ribs 2 lbs

Preparation:
1. The pork, defrost in tap water. Heat up a wok of water at high flame. Add in 1 tbsp of rice wine and 1 tbsp of cooking salt. Boil it until bubbles arising up. Rinse thoroughly. Drain.
2. Dried scallops, rinse with tap water. Soak in tap water and retain the water in the bowl.
3. Lotus seeds, soak in tap water.
4. Snow fungus, soak in tap water until it turns soft.
5. The dates, soak in tap water.
6. The lilly, tear it slice by slice. Rinse thoroughly one by one. Drain.
7. The dates, rinse with tap water. Put in the lilly. Drain.
8. Lotus seeds, remove seeds. Rinse thoroughly. Put in the lilly. Drain.
9. The fungus, rinse thoroughly. Cut in small pieces. Put in the lilly. Drain.
10. Rinse a pot.
11. Put all the ingredients in the pot. Add in dried scallops and its syrup as well as the pork. Add in water up to volume of 6L.

Steps:
1. Heat up the soup at high flame.
2. The soup boils up, turn to medium-low flame, and boil it for an hour.
3. Soup has been boiled for an hour, soak the cordyceps in tap water for 5 minutes.
4. The cordyceps has been soaked for 5 minutes, rinse thoroughly, drain.
5. The soup, add in the cordyceps, continue to boil for 30 minutes.
6. Complete. Serve.
