For the Dough
- 2 cups whole wheat flour
- 2 teaspoons oil
- 3/4 to 1 cup water * (see notes)
- Salt

Filling
- 3-4 russet potatoes
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon amchur powder (dried mango powder)
- 1/2 teaspoon cumin
- 2 tablespoons cilantro

Dough:
1. In a bowl, mix the whole wheat flour oil and water. Add salt to taste.
2. Knead the dough until it is smooth.
3. Cover and let the dough rest for 15 minutes

Filling:
1. Boil the potatoes until completely cooked. Peel the potatoes and let them cool.
2. Mashed potatoes with a potato masher. Ensure there are no chunks in the potato mash— it should be smooth. Add in the red chili powder, turmeric powder, amchur powder, cumin and chopped cilantro.
3. Mix well until everything is combined and add salt to taste
4. Divide the filling equally and form into balls.

Paratha
1. Divide the dough into equal parts. If the dough is the size of a lemon, the size of the filling should be half of a lemon.
2. Using a rolling pin, roll the dough out to about 4 inches in diameter.
3. Place the potato filling in the center of the dough. Bring in all the edges of the dough to the middle to securely pack the filling inside the dough.
4. Roll the dough (stuffed with the filling) once again to flatten out the paratha. The paratha should be about 7 inches in diameter.
5. Turn on your skillet and add some oil. Cook the paratha on each side and press the paratha occasionally so it is cooked well. Cook until slightly browned
6. Serve with Indian pickle or vegan yogurt and enjoy!
