After bar food in China - Grilled Pork // Chengdu: City of Gastronomy 05

In China, after a night of drinking nothing is better than some late night street food, specifically barbecued meat on a stick. Shao kao is the Chinese name for BBQ. You'll know a shaokao place because there will be a variety of food on a stick lined up on a table. Simply choose what you want and hand it over to be grilled.

But we are looking for a specific food - kǎo wǔhuāròu (烤五花肉) or grilled pork belly. In China, pork belly is called 5 flower pork because of the 5 layers of fat. After being grilled, the fat melts and mixes with the special Chinese BBQ seasoning. It's a simple dish, but oh so damn good! We have our fill of kao wu hua rou, and also eat a ton of other barbecued treats (broccoli, lotus root, quail eggs, pork, chicken, potatoes, and more) plus a beer to wash it all down.

HOW TO GET IT
Most BBQ street food stands will have wu hua rou - pork belly is one of the most popular cuts of meat in China. I can't confirm that this dish is a Chengdu specialty - I've seen it in other parts of China - but the version I had in this video is the best I've ever eaten.
We found the place close to Sichuan University's Wangjiang campus in a complex on the corner of Hongwasi and Beiyuan. If you are looking to have a few drinks before eating it, there is no better bar scene in Chengdu than the Jiuyanqiao Bar Street. The atmosphere is lively, and the area is beautiful with the Ji'anshun Bridge lighting up the Jinjiang, or Jin River.
