Malabar Spinach Curry With Health Benefits | Bachali Kura | Poi Ka Saag Recipe

Ingredients:
Malabar spinach – 5 bunches
Groundnut oil – 1.5 tbsp
Cumin seeds – ½ tsp
Onion—1
Ginger garlic paste – ½ tsp
Coriander leaves – ½ bunch
Turmeric powder – ¼ tsp
Tomato –2
Red chilli powder – 1 tsp
Table salt – ¾ tsp
Coriander powder – 1 tsp
Mix till water evaporates.

Procedure:
1) Heat oil in a pan, add cumin seeds
2) Once they splutter, add onion, fry on medium flame for 3 mins
3) Add ginger garlic paste, fry on low flame for 2 mins
4) Add coriander leaves, Malabar spinach, turmeric powder
5) Mix them, cook on low flame for 5 mins without covering with lid
6) Later Cover and cook on low flame for 10 mins
7) Add tomatoes in the centre, Cover and cook on low flame for 5 mins
8) Mash the tomatoes with ladle, add red chilli powder, table salt
9) Mix well, Cover and cook on low flame for 5 mins
10) Add coriander powder, Cover and cook for on low flame for 5 mins
11) Mix till water evaporates
12) Healthy Malabar spinach curry can be served with rice or chapati
