🥔 Mashed Potato & Ground Beef Casserole with Cream Cheese Filling

🔹 Ingredients

For the Potato Base:
3–4 medium potatoes (cut into small pieces)

Microwave-safe plastic bag

Salt (to taste)

For the Meat Mixture:
500g ground beef

4 whole eggs

1 onion, grated

2 cloves garlic, finely chopped

1 tsp salt

1 tsp crushed red pepper or chili flakes

1 tsp oregano (or mixed dried herbs)

1 cup bread crumbs

Fresh parsley, chopped

Mashed potatoes (prepared earlier)

For the Filling:
200g cream cheese

Sliced mozzarella cheese

Sliced ham

1 ripe tomato, sliced

Extra mozzarella for topping

🔹 Instructions
1. Prepare the Potatoes
Place cut potatoes in a microwave-safe plastic bag.

Poke two small holes in the bag to allow steam to escape.

Microwave for 5 minutes until soft.

Mash the potatoes while hot and set aside.

2. Make the Meat Mixture
In a large bowl, combine ground beef and eggs.

Add grated onion and chopped garlic.

Season with salt, chili flakes, and oregano.

Add mashed potatoes and mix thoroughly.

Incorporate breadcrumbs and chopped parsley.

Mix by hand for a uniform, well-combined consistency.

3. Layer the Casserole
Preheat oven to 350°F (175°C).

Grease a medium baking dish.

Spread half the meat mixture evenly as the bottom layer.

Spread the cream cheese evenly on top.

Layer mozzarella slices, ham slices, tomato slices, and more mozzarella.

4. Top and Bake
Spread the remaining meat mixture on top, carefully sealing the edges.

Bake at 350°F for 40 minutes until fully cooked and golden brown.

Add shredded mozzarella on top and return to the oven until melted and browned.

5. Serve
Let cool slightly, then slice and serve warm with a spatula.
