Recipe :
Soya Chilli Manchurian
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 3-4

Ingredients:
2 Cups soya chunks
4 cups water
1 tsp sugar
1 inch ginger, chopped
1 tbsp soy sauce
1 fresh green chilli, slit in half
1 tsp salt
¼ cup chopped onion
4 tbsp corn-starch (for coating)
For tossing:
2 cloves garlic, chopped
1 inch ginger, chopped
1 medium onion, diced
1 medium capsicum, diced
1 red bell pepper
1 yellow pepper
1 tsp Black pepper powder
1 tbsp corn starch dissolved in 1 cup water
1 Spring onion, finely chopped
For Manchurian Sauce:
1 tbsp soy sauce
1 tbsp vinegar
1 tsp sugar
3 tbsp tomato ketchup
1 tbsp red chilli sauce

Method:
In a pan, add 4 cups water, soya chunks, sugar, salt, soya sauce, ginger, garlic, chopped onion and slit green chili.
Bring to a boil and cook till all the water is absorbed.
In a bowl, add soy sauce, vinegar, sugar, tomato ketchup, red chilli sauce mix it well.
Remove to a bowl. Cool slightly. Add the corn starch and toss well.
Heat 1” oil in a pan. Add soya chunks to the oil and fry till lightly coloured. Remove.
For tossing:
Heat a large pan. Add oil, and heat the oil. Add garlic, ginger and sauté it well.
Add onion, capsicum, bell peppers and sauté on high flame till it slightly changes colour.
Add sauce mixture, water, black pepper powder.
Mix corn starch in 1 cup water and mix until the gravy slightly thickens and turns glossy.
Add fried soya nuggets and toss everything well. Garnish with chopped
spring onion and serve.
