Nothing quite compares to the aroma of fresh hot pepper mash. The Orange Habanero is one of my favorite peppers to process. The pungent heat, the complex aroma, and the beautiful color make the Orange Habanero stand out during processing and subsequent blending. In addition, the heat and flavor characteristics of the Orange Habanero open the door for an unlimited number of blending options and flavor profiling when developing a finished sauce recipe.

In this video, I demonstrate the simple process of preparing hot pepper mash featuring the wonderful Orange Habanero pepper. Here, I am using my 10-year old Ninja blender to shred the peppers to a perfect consistency for mash fermenting. Of course, I also prefer the vacuum fermenting technique to assure the fastest and cleanest possible ferment. In my view, vacuum fermenting is the only way to assure completely clean and fresh-tasting ferments. Since this method does not require the addition of salt brine, the peppers are able to ferment in their own juices without the addition of water. This gives, in my view, the most complex taste profile of the finished fermented peppers.
