My mac and cheese with cottage cheese and sour cream recipe is delicious! Inspired by the Terry Crews mac and cheese recipe, my version has the perfect blend of flavor and tang. The best thing about this southern style baked macaroni and cheese casserole is that it's so easy. Since there's no roux, all you have to do is mix everything together with some milk and spices, then bake. The first step in making my Terry crews inspired mac and cheese with cottage cheese and sour cream is boiling the past. Once the whole wheat elbow noodles were done, I drained them and used the residual heat to melt a tablespoon of butter into the noodles.
Although I usually layer the noodles, cheese, and milk when making mac and cheese casseroles, this time I decided to mix the elbow pasta with the cottage cheese, sour cream, and most of the cheddar in a large bowl before adding them to the 8x8 casserole dish. I also added the egg and some of the milk at this point, too.
I then started assembling the casserole by layering the noodle and cheese mixture, the remaining cheddar, and spices. I also poured in the remaining milk to make sure that the mac and cheese would turn out nice and moist.
If you follow my channel, you know that I like to add a topping to my casseroles, and this one was no different. I set aside some of the cheddar cheese and sour cream, so I mixed them and added a bit more garlic powder, onion powder, and black pepper. I spread this mixture over the top of the casserole as evenly as I could, and then put the dish in the oven.
I wanted my mac and cheese with cottage cheese and sour cream to look just as good as it looked, so I didn't want the edges to burn before the center cooked. So, after baking at 375F for 30 minutes, I took out the casserole and put strips of foil around the sides to keep the edges from browning too much.
Honestly, this easy no roux mac and cheese with cottage cheese and sour cream recipe was amazing. In terms of flavor, this was probably the best macaroni and cheese I have ever made because it had the perfect amount of tang and flavor. I really liked the texture, too: it was moist without being runny, so it held tis shape when cut and served.
I wasn't sure about adding cottage cheese to mac and cheese, but after seeing the Terry Crews recipe and doing my own research, I knew I had to give it a try. This was absolutely fantastic, so it would be the perfect side for a Memorial Day or 4th of July barbecue, or a Thanksgiving, Christmas, or Easter Dinner...or even just Sunday dinner!
