today I will make colourful healthy idli

Ingredients-
3 cup Idli rice चावल
1 cup dhuli urad dal उड़द दाल
2 tsp fenugreek seeds
मेथीदाना
Clean & wash dal or Chawal, soak all three ingredients overnight. Place the bowl in a warm place. Now grind (with 1 cup water) all three simultaneously or separately. Batter should be semi thick. Consistency of a thick pancake batter. The batter should be very smooth. Now cover the lid tight, leave it for 14-16 hrs & let it be ferment. Take some amount of fermented batter and add 1 tsp salt & mix well.
Red idli....
Take 250 gm beetroot, chopped & boil for 6-7 min. Cool it then grind it, remove excess water. Take one bowl fermented Idli batter and mix beetroot paste into it, keep aside.
Green idli....
Take 250 gm spinach, wash and blanch. Cool it ,then grind it. Take one bowl fermented Idli batter and mix spinach paste into it, keep aside.
Yellow idli....
Take one bowl fermented Idli batter and mix 1 tsp turmeric powder & 1 lemon juice into it, keep aside.
Spray the idli molds lightly with cooking oil and fill them up, with all colours batter. (red, green, white, yellow) Place the idli mold in deep pan or pressure cooker and cover with the lid. Do not put the whistle on it.
Place pan on high heat for 15 min and let the idlis steam away. After 15 min switch off the flame and let the idlis cool for 5 minutes.
Remove the idlis from moulds, with a spoon.
Enjoy with green peanut mint and coconut chutney.
