Ingredients:
Paneer (cottage cheese): 200 grams (cubed), 1 glass basmati rice (soaked 30 minutes), 2 tbsp ghee, ½ cup cashews, 1 large onion (sliced), ½ cup carrot (sliced), ½ cup green peas, 1 tbsp ginger-garlic paste, 1 small tomato (chopped), ¼ cup fried onions, fresh coriander leaves, salt to taste, 2 glasses water
Whole Spices:
1-inch cinnamon stick, 4-5 green cardamom, 4-5 cloves, 4-5 black peppercorns, 1 star anise, 1 big cardamom
Spices:
1 tsp Kashmiri red chili powder, 1 tsp turmeric, 1 tbsp coriander powder, 1 tsp cumin powder, 1 tbsp biryani masala, pinch of garam masala
Step-by-Step:
1- Fry paneer until golden brown, remove and set aside
2- Roast cashews in same pan until golden
3- Add whole spices to ghee, sauté until fragrant
4- Add sliced onions, sauté until golden
5- Add ginger-garlic paste, cook for a minute
6- Add vegetables, cook 2 minutes
7- Add tomatoes, let soften
8- Add all ground spices, cook until masala is ready
9- Add soaked rice, mix gently
10- Add paneer, cashews, and fried onions
11- Add water and salt, cover and cook 15-20 minutes
12- Garnish with fresh coriander and drizzle of ghee
