Strawberry Cheesecake Milk Punch | Clarified Cocktail with Zero-Waste Garnish

In this video, I’ll show you how to make a Strawberry Cheesecake Milk Punch — a clarified cocktail that tastes just like dessert without being heavy. We’re combining blanco tequila, Oloroso sherry, cream cheese, and fresh strawberry purée to create a drink that’s smooth, bright, and packed with flavor.

If you're into clarified cocktails, milk punches, or just love pushing cocktail techniques to the next level, this one’s for you. Oh, and we’re using the curds for the foam garnish — so it’s zero waste and zero compromise.

Whether you're a home bartender, cocktail enthusiast, or spirits geek, you’ll find tips here on how to balance flavor, nail your milk clarification, and add that professional finishing touch.

Cocktail Ingredients (Punch Base):
In one container, mix:

300 mL blanco tequila

125 mL simple syrup

75 mL unsweetened strawberry purée

100 mL lemon juice

30 mL lime juice

50 mL Oloroso sherry

2 mL vanilla extract

In another container, mix:

200 mL whole milk

70 g cream cheese

30 mL sweetened condensed milk

Whisk the dairy base until smooth, then pour the cocktail mix into it to curdle. Filter through cheesecloth and a fine mesh strainer until clear. Bottle and refrigerate.

Foam Garnish (Cheesecake Curds Foam):
200 g leftover curds

100 g unsweetened coconut water

50 g simple syrup

1.4 g methylcellulose

0.4 g xanthan gum

Blend for 30 seconds. Transfer to an iSi canister, charge with N₂O, shake, and chill for 30 minutes before serving.

To Serve:
Stir 4 oz of the milk punch over ice

Strain into a chilled coupe

Top with the strawberry cheesecake foam

You get a crystal-clear clarified cocktail that captures the flavors of strawberry cheesecake in a glass — with layers of fruit, rich cream, bright citrus, and a hint of sherry that brings out the crust-like finish.
