Undhiyu is special vegetable curry made with variety of green vegetables. It is made in various ways but today i have prepared typical undhiyu made at functions using main ingredients which are missing in many undhiyu we have on regular base. The best part of this sabji is that you can have multiple choice as lots of vegetables are used. so do try by this way, you will love the taste of this special sabji.

Ingredients (સામગ્રી):
100 gram surati papdi (સુરતી પાપડી)
70 gram potatoes (બટેટા)
50 gram sweet potato (સક્કરીયા)
30 gram ratalu (રતાળુ)
50 gram suran (સરણ)
40 gram raw banana (કાચા કેળા)
50 gram brinjal (રીંગણ)
15 gram guvar (ગુવાર)
15 gram valor (વાલોર)
15 gram tindora (ટીંડોરા)
200 gram tomatoes (ટમેટા)
25 gram green tuvar (લીલી તુવર)
35 gram green vatana (લીલા વટાણા)
30 gram green val (લીલા વાલ)
20 gram carrot (ગાજર)
1 pieces of green chili (લીલું મરચું)
3 t/spoon paste of green garlic (લીલું લસણ)
1/4 cup fresh coriander (તાજા કોથમીર)
1 & 1/2 t/spoon beet-root (બીટરૂટ)
1 piece of drumstick (સરગવા ની સીંગ)
1 t/spoon ginger paste (આદુ ની પેસ્ટ)
1 1/2 t/spoon chili powder (લાલ મરચું પાવડર)
1 t/spoon turmeric powder (હળદર)
1 t/spoon cumin & coriander powder (ધાણાજીરું)
salt to taste (મીઠું)
1 t/spoon mustard & cumin seeds (રાયજીરુ)
25 gram imly (ઈમ્લી)
10 to 12 methi balls (મેથીની ગોળી)
1 & 1/2 t/spoon undhiyu masalo (ઉંધીયું મસાલો)
200 ml cooking oil (ખાવા નું તેલ)
bay leave, cinnamon, cardamom, clove,dry chili and badiya (વઘાર માટેનો સૂકો મસાલો)
