Cheese Paneer Spring Rolls Recipe (Prep: 15-20 mins, Cook: 15-20 mins, Serves: 4-5)

Vegetable Filling (Prep Time: 10 minutes)

Ingredients:

200gm paneer
3 tbsp Oil
2 tbsp Chopped Garlic (Lehsun)
2 tbsp Chopped Ginger (Adrak)
2 tbsp Chopped Spring Onion Bulbs
1/2 cup Sliced Onions (Pyaaz)
1 cup Julienned Carrots (Gajar)
1 cup Julienned Capsicum (Shimla Mirchi)

Salt to taste
2 tsp Green Chilli Paste (Hari Mirchi)
1 tbsp Chilli Flakes
2 tbsp Ketchup
1 tsp Soy Sauce
Chaat Masala 1 Pinch

Method:

Heat wok on high heat, add oil, garlic, ginger. Stir and cook for 1-2 minutes.
Add remaining filling ingredients, stir-fry for another 1-2 minutes on high heat.

Turn off flame, let mixture cool, and set aside for later use.
Spring Roll Sheets (Prep Time: 10 minutes)

Ingredients:

250 grams Maida (Refined Flour)
250 grams Cornflour
Pinch of Salt
475 ml Water
Method:

In a bowl, whisk together maida, cornflour, and salt. Gradually add water to make a smooth, lump-free batter.
The batter should be flowy, not too thick or thin. To check consistency, dip a spoon in the batter - it should coat the spoon while still flowing.
Let the batter rest for 12-15 minutes.
Heat a non-stick pan on medium heat. Use a ladle to pour batter and swirl the pan to create a thin sheet. Don't use a spoon to spread like dosa.
Cook the sheet for 30-40 seconds. Use a spatula to remove carefully. Cook all sheets similarly. Tips:
If the sheet sticks to the pan, the batter is too watery. Add cornflour or refined flour to adjust.
If the batter doesn't spread evenly, it's too thick. Thin it with water.
If sheets aren't coming out easily even with perfect batter, the pan might be too hot. Reduce heat.
Place cooked sheets on a grill or plate dusted with cornflour to prevent sticking. Cover with a moist cloth until use.
Making Spring Rolls (Assembly Time: 5 minutes)

Ingredients:

Vegetable filling
Spring roll sheets
2 tbsp Maida (Refined Flour)
50 ml Water
Oil for frying
Method:

In a small bowl, make a lump-free slurry with maida and water.
Take a spring roll sheet, add filling, fold in both ends to seal, then roll tightly.
Apply slurry on the edges to seal properly. Patch any openings or cracks with slurry.
Heat oil in a wok on medium heat. Deep fry spring rolls until crisp and golden brown.
Serve hot, cut into pieces, with your favorite dip.
