Eggplant Rollatini Recipe - Made with Roasted eggplant

Ingredients:

2 medium or large eggplants sliced thin
( 1/8 to 1/4 inch thick)
3 to 4 tbsp olive oil to baste over the eggplant
1/2 cup of shredded parmesan cheese +
An additional 1/4 cup for sprinkling on top
1 cup whole milk shredded mozzarella
2 cups of whole milk ricotta cheese
1 clove of garlic chopped
1/4 tsp sea salt
1/4 tsp pepper
1/2 tsp Italian seasoning or oregano
1 egg
1 (28oz) jar tomato sauce or homemade sauce

SAUCE RECIPE:
28oz tomato sauce
3 garlic cloves chopped
1/2 tsp sea salt
1/4 tsp pepper
1 tsp Italian seasoning
2 tbsp olive oil

Recipe:

Slice your two eggplants. Lay them on a baking tray with paper towel sprinkle one side with salt. Then add another paper towel and add the rest of your eggplants sprinkle those with salt as well only on one side. Then place a paper towel over the eggplant let them sit for 20 minutes or longer so they exude all their water.

For the ricotta cheese filling add your ricotta cheese, Parmesan cheese, garlic clove and your seasonings and an egg and mix lightly. Refrigerate the mixture until you're ready to use it.

Preheat your oven to 425° on a baking tray line all your eggplant and baste with olive oil. Cook it for 5 to 10 minutes monitoring it to ensure that it doesn't overcook we just need it to be able to be rolled.
After that time is up remove them let them cool slightly preferably on a wire rack so they don't get soggy.
Get a large baking dish you grease the baking dish you add some of your sauce on the bottom. Then take each eggplant with a dollop of ricotta cheese and roll them up. Place them all on top of the sauce in the baking dish. Add your remaining sauce on top you can leave some for after it's cooked. Then sprinkle your parmesan cheese and your mozzarella cheese. Bake it at 400° for 20 25 minutes until the sauce bubbles Cooks the eggplant and for the cheese to melt. And your eggplant rollatini is complete. You can have it with just a salad. Or just have it with some bread. Or your favorite pasta. I did have it with my favorite spaghetti.
