In this video Chef Austin Green demonstrates how to Cook a northern rock sole. First thing he does is gut and scale the sole. Once this is done Austin like to cut slits diagonally across the fish in both direction not only does it look cool but it helps the fish cook evenly. Next step he seasons both side with salt and pepper and let it absorb into the fish and then pats up any moister with a paper towel. Finally before putting into the fryer he coats the sole in flour making sure to knocking off any excess then place into a 350 degree fryer until golden brown or about 2-4 minutes. Once out of the fryer he like to season it with salt immediately. Then he serves with a squeeze of lemon.
