Ingredients
1 cup water
1 tsp chili flakes
Salt (to taste, divided)
Fresh green coriander (a few sprigs, chopped)
1 cup semolina (suji)
2 boiled and grated potatoes
2 tsp cornflour
Oil (for greasing and frying)


First, in a pan, bring 1 cup of water to a boil. Add 1 tsp of chili flakes, some salt, and fresh, chopped green coriander to the boiling water. Once the water is boiling, add 1 cup of semolina (suji) to the pan, stirring continuously to prevent lumps from forming. Keep stirring until the mixture thickens and comes together into a dough-like consistency. At this point, turn off the flame and let the semolina mixture cool down.

Once the semolina mixture has cooled, transfer it to a bowl. Add the 2 grated boiled potatoes, 1 tsp of salt, and 2 tsp of cornflour to the semolina mixture. Use your hands to mix everything thoroughly until a well-combined dough forms. Grease your hands with a little oil. Take a small portion of the dough and roll it into a log shape on a board. Using a knife, cut the log into small, square-shaped pieces. You can give them any shape you prefer, but square pieces are suggested. For an appealing look, lightly grease the back of a fork with oil and gently press it onto each square piece.

Finally, heat a sufficient amount of oil in a pan for frying. Once the oil is hot, carefully place the prepared Aloo Suji Bites into the pan. Fry them until they turn golden brown and become crispy. Due to the semolina, these bites won't absorb much oil. Once fried, remove them from the pan. You can enjoy these crispy Aloo Suji Bites with ketchup or green chutney, and they pair wonderfully with a hot cup of tea.
