Ingredients:

• Chicken: 750 grams
• Ginger-garlic paste: 2 tsp
• Onions: 300 gm (finely chopped)
• Salt: 1 tsp or to taste
• Red chilies: 1 tsp
• Whole garlic: 3 (slightly crushed)
• Bay leaves: 2
• Whole red chilies: 4
• Coriander powder: 1 tbsp
• Cumin seeds: 1 tsp
• Cumin powder: 1 tbsp
• Turmeric powder: 1 tsp
• Red chili powder: 1 tsp
• Green chilies: 4 (slit)
• Garam masala powder: 1 tbsp
• Mustard oil: 150 ml

Instructions:

1. Marinate the Chicken:
• In a bowl, mix the chicken with 1 tsp turmeric powder, 1 tsp red chili powder, salt, and ginger-garlic paste.
• Let it marinate for at least 30 minutes.
2. Heat the Mustard Oil:
• Heat mustard oil in a large pan or kadhai until it reaches its smoking point, then reduce the heat to medium. This helps remove the pungency of the oil.
3. Prepare the Base Masala:
• Add bay leaves, cumin seeds, and whole red chilies to the hot oil. Let them splutter for a few seconds.
• Add the finely chopped onions and cook on medium heat until golden brown.
4. Add Garlic and Green Chilies:
• Add the crushed garlic and slit green chilies. Sauté for a minute until aromatic.
5. Add the Spices:
• Mix in the coriander powder, cumin powder, and red chili powder. Stir for a few seconds to roast the spices.
6. Cook the Chicken:
• Add the marinated chicken to the pan. Sauté on high heat for 5–7 minutes, stirring frequently until the chicken is well-coated with the masala.
7. Add Water and Simmer:
• Add enough water to cover the chicken (about 1–1.5 cups) and bring it to a boil. Reduce the heat, cover, and let it simmer for 20–25 minutes or until the chicken is tender and the oil separates.
8. Finish with Garam Masala:
• Sprinkle the garam masala powder over the curry. Mix well and cook for another 2–3 minutes.
9. Serve:
• Serve hot with steamed rice, chapati, or paratha.
