this is my great grandma Willie Mae's recipe, and I love keeping tradition alive.

Recipe:

Pie Crust:
🥧 2½ cups all-purpose flour
🥧 2 tsp sugar
🥧 1 tsp salt
🥧 1 cup cold butter, diced
🥧 ½ cup ice-cold water

Filling:
🥧 2 cups mashed russet potatoes (about 2 medium)
🥧 ½ cup butter, melted
🥧 1½ cups sugar
🥧 ¼ tsp baking powder
🥧 1 tsp salt
🥧 1 tsp vanilla extract
🥧 ½ tsp almond extract or lemon extract (optional)
🥧 2 eggs
🥧 ½ cup milk
🥧 2 tbsp flour

Instructions:
Preheat oven to 350°F.
Crust: Mix flour, sugar, and salt. Cut in butter until pea-sized. Add ice water, mix, and chill for 1 hour. Roll out, fit into pie dish, prick it with a few holes using a fork and pre-bake for 8-10 minutes.

Filling: Mash potatoes with melted butter and sugar. Add extracts, eggs, milk, and sifted dry ingredients.

Pour filling into crust and bake for 45-55 minutes. Let cool to set.

Or, you can use a store bought pie crust. Use the Deep Dish one for this recipe. Let the crust thaw, prick it with a few holes using a fork, then add your batter and bake on a sheet tray.
