My most favorite egg curry is this one, eggs are poached in roasted coconut gravy. The eggs that are cooked in this curry tastes extremely delicious. The freshly grated coconut is roasted till golden brown in color, combined with aromatic spices and made into a paste. The eggs are cracked directly into the coconut gravy and allowed to cook. It’s more like poaching the eggs in the aromatic coconut gravy.
