Recipe -

Ingredients:
Green Gram Sprouts / Mung Bean - 1 Cup
Bread Crumbs - As required
Gram Flour / Besan - 1/2 Cup
Cottage Cheese / Paneer - 1/2 Cup mashed
Cheese - 1/2 Cup grated (optional)
Garlic Paste / Lahsun Paste - 1 tsp
Black Salt / Kala Namak - As per taste
Black Pepper Powder / Kali Mirch Powder - 1/2 tsp
Ginger / Adrak - 1 Inch grated
Green Chilli / Hari Mirch - 1 to 2 Finely chopped (optional)
Mint Leaves / Pudina - A few
Coriander Leaves / Hara Dhaniya - A handful + For garnishing
Cumin Seeds Powder / Jeera Powder - 1/2 tsp
Red Chilli Powder / Lal Mirch Powder - 1/2 tsp
Oil - For frying
FOR PREPARING DIP :
Veg Mayonnaise - 1 tbsp
Hung Curd - 2 tbsp
Onion / Pyaz - 1/2 Finely chopped
Mint Leaves / Pudina - A few
Black Pepper Powder / Kali Mirch Powder - 1/4 tsp or as per taste

Instructions:
Saute the green gram sprouts in a pan on medium flame for 2 to 3 minutes till it becomes slightly golden brown. Keep stirring continuously.
Once done, turn off the flame and let it cool down completely. Then transfer it to a grinding jar. Add ginger, garlic, green chilli, mint leaves, and coriander leaves. Grind it for a few seconds.
Roast the besan in a pan for 1 to 2 minutes on low flame till the nice aroma begins to rise. Keep stirring continuously.
Once done, turn off the flame and let it cool down.
Take roasted besan in a mixing bowl. Add the ground sprouts mixture and mix well.
Then add cumin seeds powder, black salt, black pepper powder, red chilli powder, paneer, and cheese. Mix well. Add 2 to 3 tsp of bread crumbs and mix well.
Take a medium ball-sized portion of the mixture. Press it with your hands and prepare a round shaped flattened falafel. Then coat it with bread crumbs completely. Likewise, prepare all falafel.
Meanwhile, heat oil in a fry pan for frying. Place prepared falafel into the hot oil. Fry them on medium to low flame for 2 to 3 minutes.
Fry them until they become crispy and golden brown from both sides. Put the fried falafel on the tawa to release excess oil. Then, take them out on a serving plate.
FOR PREPARING DIP :
Take veg mayonnaise in a bowl. Add hung curd and mix them well.
Then add onion, mint leaves, and black pepper powder. Mix well.
