Stewart's Honey Kitchen 1: Exciting New Equipment! #Beekeeping Basics - The Norfolk Honey Co.

As we draw ever closer to the new season I thought a session away from the office would be a welcome change!
I spotted a really fun piece of equipment that while technically isn't beekeeping equipment is bee related...

One of my other passions is cooking and I found a really fun piece of bakeware that I wanted to share with everyone. The tin is made by NordicWare and is available online. The recipe I used came from the reverse of the card packaging but I replaced half the sugar with honey and it produced a darker, honey flavoured cake, deeelicious!

Please do give it a try, I think it's a great cake for any beekeeper but also a great sharing celebration cake.

Recipe: Honey Lemon Cake

375g cake (plain) flour
1.5 tsp Baking Powder
1 tsp Baking Soda
0.25 tsp Salt
250g Butter, Softened
150g Caster Suger
150g Honey
4 Eggs
2 tbs Lemon Zest
300ml Sour Cream

Honey Glaze:
3Tbs Honey
50g Icing Sugar
2 Tbs Lemon Juice

Directions:
Preheat oven to 325f 175c Fan 155c Grease and flour the tin to prevent sticking.
Cream butter with honey and sugar until light and fluffy.
Add eggs and mix, adding a little flour if it starts to separate.
Add remaining Flour and other dry ingredients along with Sour Cream and Lemon Zest.
Beat until it forms a smooth batter then pour into cake tin.
Bake for approx. 45-55 mins until a tester comes out clean.
Allow to cool in tin for 10 mins before turning out onto wire rack.

Make up the glaze by warming all the glaze ingredients in a small pan over a low heat. Once mixed allow to cool a little before patinting and pouring over the cake.
