⭐️ Mini Veggie Quiche ⭐️
INGREDIENTS
- 9 slices of bread
- 1 cup broccoli
- 1 cup cauliflower
- ½ cup grated cheese
- 3 eggs
- ½ cup hemp milk
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp adobo powder
- Celtic salt & pepper to taste

ASSEMBLE
- Preheat over to 400
- Remove crust and flatten
- Heavily spray the pan with avocado oil
- Press bread into muffin pan
- Bake for 5 minutes
- Chop Vegetables and whisk together with eggs and cheese
- Evenly pour the mixture into muffin tin
- Bake for 15 minutes
- Allow to fully cool before removing

⭐️ Veggie-Loaded Nuggets ⭐️
INGREDIENTS
- 1 cup carrot
- 1 cup broccoli florets
- 1 cup cauliflower
- 1 garlic clove, peeled
- 2 eggs
- 1/2 cup gluten-free breadcrumbs
- 1 cup fully cooked quinoa
- 1/3 cup shredded cheddar cheese
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1 cup additional breadcrumbs for rolling

ASSEMBLE
- Preheat the oven to 400 degrees.
- Place the carrots, broccoli, cauliflower, and garlic into a food processor. - Grind to chop the veggies finely.
- Add the remaining ingredients except for the 1 cup breadcrumbs. Grind into a uniform batter.
- Use a measuring spoon to portion out batter, form into nuggets shape, and roll in the 1 cup additional breadcrumbs. Place onto the prepared baking sheet and repeat to make all of the nuggets.
- Bake for 30-32 minutes or until lightly golden brown and firm to the touch.
