Elotes and esquite (Mexican Street Corn) are a popular street food made out of corn smothered in cheese, mayonnaise, butter, chili powder, and lime. They are commonly sold by eloteros (street vendors). Esquites (or elotes en vaso) are similar to elotes, but served in a cup.
