Here's a recipe for Dahi Bhalla

Ingredients:

For the bhalla
1 cup urad / mash dal
1cup moong dal
1 chili
1 tsp salt
Oil for frying

For soaking:
5 cups tap water

For the sweetened curd:
5 cups fresh and thick curd
2 tbsp sugar
½ tsp salt

For serving:
Green chutney
Tamarind chutney
Chili powder
Chaat masala
Finely chopped coriander
⁠chopped onion tomatoes and boiled potatoes as per requirements

Instructions:

Bhalla
Soak dal for 2 hours.
Blend dal with adding water as needed.
Transfer to a bowl.
Add salt and mix.
Prepare a thick batter.
Fry spoonfuls in hot oil until golden brown.
Drain excess oil.

Soaking:
1. Take tap water
2. Soak fried bhallas for 30 minutes.
3. Squeeze out water and transfer to a plate.

Sweetened curd:
1. Mix curd, sugar, and salt.

Assembly:
1. Pour sweetened curd over bhallas
2. Add green and tamarind chutney.
3. Sprinkle chili powder, cumin powder, and chaat masala.
4. Top with onion tomatoes, potatoes and coriander.
5. Serve chilled.

Tips:
Soaking bhalla / barray in water reduces oil and makes it soft.
Use fresh curd for the best taste.
