Only 3 ingredients! A delicious meat roll that makes a hearty meal with a mixture of sausage and spices. This recipe is one of my friend's favourites.

When should this meat roll be made?

This dish is mainly offered around the holidays in our household. It’s a popular Christmas meal, but we also like it at Easter. Of course, no special occasion is required for this dish to arrive in our kitchen. I strongly advise cooking it the day before and storing it in the fridge till morning. When cut and placed in a sandwich, you may create a great lunch for your family or friends.

What sort of meat should be used?
Pork loin is the best choice for this purpose. It is worthwhile to master the cutting method demonstrated in the video below. Open the meat from two sides with a sharper knife using a “Z” cut. Of course, in this scenario, we should also consider the health of our hands. If you value security, consider wearing chain gloves. It could be worthwhile to experiment with other types of meat, such as chicken breast or beef sirloin. Depending on the type of meat, adjust the cooking time accordingly.

How does the filling get made?

THe meat roll can also be prepared with plain minced pork and flavored to taste. I like the recipe’s pre-prepared sausage meat since the components have had more time to absorb the tastes and fragrances. Feel free to adjust the spices to your liking. Put a layer of grated cheese between the meat and the filling to try something fresh. Perhaps we might add a bit more spinach to our meat roll.

What method do we use to bake our meat rolls?

Make sure our oven is preheated to 180°C. If you want your meat to be juicier, cover it with foil for the first 30 minutes of baking, then remove the foil and bake until the bacon covering the loin becomes a lovely red color.

Is it preferable to eat it cold or warm?

It’s a very excellent dish when served fresh from the oven with a fantastic side dish, such as boiled parsley potatoes or rice. The biggest surprise comes the next day, when we take it out of the fridge, slice it, and lay it in the middle of a sandwich…it simply becomes exquisite dish!

Ingredients of meat roll:
1 kg whole pork loin
500 g of fresh sausage
200 g sliced bacon
2 tbsp mustard
1 tbsp soy sauce
salt
pepper


Steps:

Open the whole pork loin with two opposite cuts. This will give you a larger rectangle of the meat.
Salt&pepper, then flat on both sides the pork loin with a meat hammer.
Cut open the sausages and remove all the meat mixture. Add soy sauce, mustard and mix well. Spread the mixture over the surface of the pork loin. Leave out the ends of the meat. Roll it up carefully.
Cover with bacon slices and bake at 180°C (350°F) for 70-80 minutes or until bacon is crisp.
